Smoked Tri Tip - but we keep it a nice, perfect Medium Rare

With this recipe, I slow smoke - and then BBQ braise - some Beef Short Ribs. Once they are pull-apart tender, I made a creamy homemade mac & cheese using 3 different cheeses. Then I pile the juicy, smoky bbq-style Short Ribs high on a bed of creamy macaroni goodness.

This chili recipe has Big, Bold, Beefy flavors... without any beans! 

I'm doing Baltimore Style Pit Beef... but since I'm doing it at home - on my charcoal grill - I'm calling it "Mississippi Style" Pit Beef.
